1. Byadgi Chile Pepper (Karnataka):

Has mild heat but flavourful colour (deep red).

Spice powder is commonly made from dried Byadgi Chile Peppers.

Creates a vibrant colour(used in some foods) as opposed to the heat(used in others) by only using very few dried Byadgi chile pepper per serving.

2. Guntur Chile Pepper (Andhra Pradesh):

One of the hottest chile peppers of India and also found in another country.

Commodity traded around the globe.

Used for making spicy curries and mixed spices.

3. Kashmiri Chile Pepper:

The most colourful(bright red) with very little heat.

Great for making tandoori gravies and drying foods.

4. Kanthari Chile Pepper (Kerala):

Extremely small, but hot and spicy.

Traditionally uses Kanthari Chile Peppers for creating traditional Kerala pickles and dishes. Also known as ‘bird’s eye’ chile pepper.
